Roubaix Cabernet Sauvignon 2021
The 2021 growing season started early due to a dry mild winter. The cool spring temperatures were mild, followed by warm summer days and cool nights which allowed for ideal berry development. The berry clusters developed nicely with small berries, high in phenolic attributes, concentrated flavors, and refined tannins. During the latter part of September, the berries came to their peak of ripeness and where ready to be hand harvested.
Harvest occurred early in the morning and the grapes were transported to the winery and processed within hours of the first berry coming off the vine. Berries are destemmed and hand sorted with attention to detail and only the most pristine berries are transferred to the fermentation tank.
Fermentation occurred in a small stainless tank with gentle pump overs to extract all the flavors and structure the berries had to give.
The wine aged New Tarransaud French oak barrels for 25 months before bottling in December 2023.Aromas of dried strawberry, black cherry and blackberry lead way to milk chocolate, fresh ground dark coffee, porcini mushroom, black licorice, and cigar box.
The palate is rich and complex with fine tannins, flavors of blackberry, cherry and raspberry, are present followed by delicate nuances of the integrated French oak. The palate is completed by flavors of baking spices, white truffle, and dark chocolate.
